Vegetable Stir Fry Pasta

Mr. A and I agreed to plan our meals for the entire month in order to avoid eating outside. This way, our family get to eat healthy homemade cheaper meals. We also get to cook and prepare our meals together.
In line for Luntiang Lunes, we both decided to try Panlasang Pinoy's: Vegetable Stir Fry Pasta for dinner.


Ingredients: Adapted from Panlasang Pinoy
  • 1 lb tri-color rotini, cooked according to package instructions
  • 1 medium onion, sliced
  • 1 medium red bell pepper, julliened
  • 1 medium green bell pepper, julliened
  • 1 cup white mushrooms, chopped
  • 1 small yellow squash, chopped
  • 1  1/2 to 2 cups marinara sauce
  • salt and pepper to taste
Cooking Procedure:

1. Heat a wok and put-in the cooking oil.

2. When the oil becomes hot, put-in the onion and cook for 2 minutes.

3. Add the bell peppers and white mushrooms then stir. Cook for 2 minutes.

4. Add salt, pepper, and yellow squash then stir and cook for 3 to 5 minutes.

5. Put-in the rotini pasta and cook for 2 to 3 minutes.

6. Pour-in the marinara sauce and mix well. Cook for a minute.

7. Serve. Share and enjoy!

Marinara Sauce Recipe
Ingredients: Adapted from Panlasang Pinoy
  •     2 teaspoon tablespoon garlic, minced
  •     2 tablespoons dried oregano
  •     2 pieces dried bay leaves
  •     2 tablespoons dried parsley
  •     3 cups crushed tomatoes
  •     1 small onion, minced
  •     3 cups tomato sauce
  •     2 1/2 tablespoons olive oil
  •     1/2 cup Parmesan cheese, grated
  •     1/2 teaspoon crushed chili or chili powder

Cooking Procedure:
  1.     Heat a cooking pot then pour-in olive oil.
  2.     Sauté garlic and onions.
  3.     When the onions are softy, add crushed tomatoes and tomato sauce and let boil.
  4.     Put-in dried oregano, parsley, chili, bay leaves, and parmesan cheese. Stir.
  5.     Reduce heat to low and simmer for 3 minutes or until the mixture thickens.
  6.     Turn-off heat and let the marinara sauce cool down.
  7.     Transfer to a container and store in the fridge or cook as an ingredient, right away.
 We used only one tone color for the rotini, freshly sliced tomatoes instead of canned crushed tomatoes and freshly cut parsely instead of dried ones.
As for me, I loved Vegetable Stir Fry Pasta, very light and tasty. Already, I am planning to prepare it for Sister Grace and our mother. : )
