Luntiang Lunes: Togue Guisado (Sauteed Mongo Sprout)

I was excited to post this Togue Guisado (Sauteed Mongo Sprout) for Luntiang Lunes last week but there was no internet connection. Good thing I only have to wait for a week. : )
Our mother having been to market early Saturday morning, usually prepares Togue Guisado (Sauteed Mongo Sprout) for dinner. Although this dish is commonly cooked with grind meat, she have not tried adding meat in her dish. I like it  that way, very simple...And there's one thing she patiently does with the togue prior to cooking, removes the tail root in each sprout up to the last piece. Can I copy that? I followed, Yes! every step our mother does in preparing the dish. I have not also missed the lesson there, that spending your time and love for your dish makes it special.

Ingredients:
  • 500 g mongo sprout/togue
  • 1 medium carrot, sliced
  • 100 g green beans, sliced diagonally
  • 2 large tomatoes, sliced
  • 1/2 block tofu/tokwa, cubed and fried
  • 1 medium onion sliced 
  • fish sauce/patis
  • 1 1/2 tablespoons canola oil

-Deep fry tokwa until golden brown, set aside.
-Remove excess oil and leave 1 1/2 tbsp oil to saute onions and tomatoes.
-Add tokwa, beans and carrots.
-Season with fish sauce and cook for 2 minutes.
-Add mongo sprout stir fry for 1 minute.
-Remove from heat.
-Serve hot.
