Luntiang Lunes: Potato Pancakes

Potato Pancakes for Luntiang Lunes today! I have learned to make potato pancakes through an Indian friend. Although, she mixes her potatoes with ground chicken, I make mine plain in line for Luntiang Lunes theme: Meatless Monday.

Ingredients:
  • 500 grams potatoes ( 2 large pieces) grated finely
  • 3/4 cup All Purpose Flour
  • 1 teaspoon salt
  • pepper
  • 2 teaspoons dried basil leaves
  • 1 onion, grated
  • 1 egg
  • 3 tablespoons canola oil
- Mix all ingredients except canola oil.
- Heat canola oil in a frying pan medium high heat.
- Drop 1/2 cup mound into hot oil, and flatten. 
- Fry, turning once, until golden brown. 
- Transfer to paper towel lined plates.
- Repeat until all potato mixture is used.
