I love to share my two sons' favorite and for today's Green Monday (Luntiang Lunes): Ginisang Ampalaya. Their thoughtful grandmother even goes out her way to buy bitter gourd (ampalaya) for them everyweek. Sometimes my cooking turns out too bitter for my taste but they eat the dish anyway. I wish you can see them munching and asking for their second serving. =)

Ingredients:
- 500g bitter gourd (ampalaya) sliced thinly
- 100g chicken
- 2 pcs tomatoes
- 1 medium onion
- 1 tbsp canola oil
- 1/2 cup water
- 1 whole egg
- 1tbsp fish sauce
Preparation:
- Cut into half (lengthwise) bitter gourd, remove seeds and totally scrape white part. Then slice thinly.
- Slice chicken in small bites.
- Slice also tomatoes and onion.
Cooking:
- Heat canola oil, saute onions, next chicken then tomatoes.
- Add water and fish sauce then cover the pan, leave it boiling for 1 minute.
- Add bitter gourd and cook for 5 min.
- Add egg and mix well.
- Remove from heat.
- Serve hot.
