Layered Cheese and Ube Maja

     We have posted years ago of this beloved Filipino dessert maja using the basic ingredients: cornstarch, coconut milk, sugar, and corn. We added cream cheese at that time to make it creamier, then added some food coloring to make an ombre effect.
     This time for our maja, we are featuring cheese and ube flavours that are trending combination right now. There's this ube malagkit turon with cheese, ube flavoured pandesal with cheese filling and cheesy, ube cupcake to name a few. This is our take of this combo flavours: Layered Cheese and Ube Maja.


Ingredients:

Cheese Maja:
1 cup coconut cream
1 cup coconut milk
6 tbsp sugar
200 ml creamed sweet corn
6 tbsp fresh milk/ coconut milk
6 tbsp cornstarch
1/4 cup grated cheese

Ube Maja:
1 cup coconut cream
2 cups coconut milk
1/3 cup sugar
1/2 cup fresh milk/coconut milk
1/2 cup + 1 tbsp cornstarch
3/4 cup ube halaya/jam
Few drops of ube flavour

5 tbsp desiccated coconut



Preparation:
For Cheese Maja
1. In a deep pot, pour coconut cream, coconut milk and sugar, bring to boil
2. Add creamed sweet corn and mix
3. Combine 6 tbsp. fresh milk and cornstarch to make a slurry before pouring in the pot.
4. Stir constantly until mixture forms a very soft dough. Mixture is cooked if it does not stick anymore in the sides of pot and spatula. Another way to test is to take a teaspoon of the spatula and drop in a plate. If it solidifies and does not stick, it is already cooked.
5. Turn off heat, add cheese and mix well.
6. Pour mixture immediately in a mold. Set aside

For Ube Maja
7. Do the same #'s 1-2 procedure  in cheese maja 
8. Combine half cup fresh milk and cornstarch to make a slurry then add ube halaya/jam before pouring in the pot.
9. Stir constantly until cooked and drop a few of ube flavour. Mix well. Turn off heat.
10. Pour immediately on top of cheese maja. Leave to cool down.
11. Toast desiccated coconut until golden brown.
12. Remove from mold cheese and ube maja, apply toasted coconut on top.
13. Serve warm or cold.
