Christmas Broken Glass Jello


     The very first time I tasted a broken glass jello was in Solibao restaurant in Baguio City. I can still remember my delight of ordering the right dessert after a full supper with colleagues. It was creamy but not too sweet, wobbly but did not lose its shape and colorful with cubes of various flavoured jello but not over powering each others tastes. I tried to order for second serving but the restaurant already ran out of it. My coworkers and I decided to come back after payday, again the crew said that their dessert was all finished! We found out that this broken glass jello was their signature dessert. No wonder it's so popular.
     I forgot all about it up until when my family and I migrated in Canada. The first few years I was a stay at home mom and rediscovered my passion in food and decorating. On my eldest son's first birthday here in 'We the North' land, I came across a website with a beautiful picture of this broken glass jello. I made him my very first homemade broken glass jello.
     This time around, I decided to prepare it once again with my youngest son and played on the colors for the theme Christmas, thus named: Christmas Broken Glass Jello.

Ingredients:

4 boxes flavoured Jello (85 g each 2 boxes lime, 2 boxes strawberry)
1 can (300 ml) sweetened condensed milk
4 sachets (15 ml each) Knox unflavoured gelatin
1 1/2 cups water
4 1/2 cups boiling water

Preparation:

1.  Put half cup of cold water in the mixing bowl, add one sachet of Knox gelatin followed by 2 boxes of lime flavoured Jello. Let it sit for about 3-5 minutes. Pour in 1 1/2 cups boiling water. Stir until the gelatin is fully melted. Pour into square mold. Repeat the same process to the strawberry flavoured Jello. Let both Jello set in the refrigerator for 4 hours or overnight.

2. After 4 hours, pour in 1/2 cup cold water, add 2 sachets of Knox gelatin then let it bloom for 3-5 minutes. Add 1 1/2 cup boiling water and the condensed milk. Mix well. Leave it to cool down to room temperature.

3. While waiting for the milk gelatin to cool down, bring out the two Jellos from the refrigerator and cut them into small cubes. Alternately arrange the lime and strawberry Jello cubes in a bigger mold (8"x 3" round pan or any pan than can hold 800 ml).
Now pour in the milk gelatin, then place in the refrigerator until it sets or leave it overnight.

4. Unmold the gelatin, please read tips on how to release gelatin from the mold.


Tips:


  • Always let the Jello and gelatin sit or bloom for few minutes before adding boiling water for easy dissolving.
  • Let the milk gelatin cool down to room temperature before pouring into the flavoured Jello cubes to avoid staining or tie dye effect.
  • To release the gelatin from the mold, immerse the mold just to the rim in warm water for few seconds and with the use of your middle and index finger tips, gently pull the edges of the gelatin away from the side of the mold. Take out mold from the water, wipe mold's outer edges dry. Place a serving plate (10" wide) upside down over the mold. Hold plate and mold together then flip. Tap the mold to loosen the gelatin. Then slowly lift the mold.

Slice and serve.



Here's another way of presenting this Christmas broken glass jello. I call it Christmas 7-Layered Jello. Takes a lot of patience, waiting for each layers to set before adding another layer on top but it's worth it! Very attractive and colorful.
Christmas 7-Layer Jello! Kiddos will love it.
4 pkg. 3 oz Jello (2 lime, 2 strawberry)
2 pkg. Knox unflavored gelatin
1 (300 ml)can sweetened condensed milk
1. Open 1 pkg strawberry flavored jello. Add 1/4 cup cold water. Let it stand for 3 minutes Then add 1/2 cup boiling water. Stir to dissolve. Cool to room temp and pour in desired mold. Refrigerate for 15 minutes or until set (make sure your refrigerator is level!)
2. Mix 1 can sweetened condensed milk with 1 cup boiling water. In a small bowl, sprinkle 2 pkg unflavored gelatin over 1/2 cup cold water. Let stand for 3-5 minutes and then add 1/2 c boiling water to dissolve gelatin; add to milk mixture and stir to combine. Cool to room temp and pour 1 cup of milk mixture over first layer of jello. Refrigerate for 15 minutes or until set.
3. Repeat for the next three packages of Jellos. Alternately pouring flavored Jello, let it set, then milk mixture.Starting and ending with flavored Jello. Let it set. Cut and serve!
Note: Place first the mold in the refrigerator making sure it's level. Then start pouring the flavored Jello. Never move nor take it out from the refrigerator during the whole process. This is to ensure a clean finish.
