Cupcake Polvoron Greetings

Aunt Helen just out of the blue gave me her pastry decorating tips as well as her old Cake Decorating magazine by Wilton. Little did she know how much her gesture has revived my interest in decorating. Thank you Auntie.
Previously, I made polvoron pops and posted it here. I also made cupcake polvoron. Comparing these two ways of polvoron presentation, for me it's the cupcake that's easier to make.
Below is my first ever cupcake polvoron I made with royal icing decorations using Aunt Helen's pastry decorating tips.


Ingredients:

  • 3 cups flour (toasted for 10 minutes)
  • 1 cup powdered milk
  • 1/2 cup white sugar
  • 1 cup butter
  • 1/2 cup peanut butter (optional) 
  • lemon juice
  • semisweet chocolate
  • icing sugar
  • ovasil (powder egg white)

Cooking Procedure:
  1. Toast flour until light brown or 10 minutes.
  2. Add melted butter, sugar and milk.
  3. Mix and incorporate all ingredients well.
  4. Use small polvoron molder to shape polvoron mixture.
  5. When done, place polvoron in freezer for 5 minutes.
  6. Melt chocolate in a double broiler.
  7. Prepare small plastic cups, place cupcake liner in each plastic cups.
  8. Take out polvoron from the freezer.
  9. Spoon some melted chocolate and pour in the bottom of cupcake liner.
  10. Immediately place one polvoron in the cupcake liner
  11. Pour again melted chocolate on top of polvoron until well coated.
  12. Do the same with rest of polvoron.
 Royal Icing Recipe:
  1. Soak 1 tablespoon ovasil in one tablespoon water for 10 minutes.
  2. Add lemon juice and some icing sugar.
  3. Adjust how thick the icing by adding more icing sugar to make it thick or add lemon juice to make it less thick.
  4. Mix for 10 minutes.
  5. Add desired food colors for decoration.
