Cream Dory, Tofu and Salted Black Bean

Mr. A my husband loves dishes with Tofu. No doubt he will love again this Cream Dory, Tofu and Salted Black Bean I prepared. This is a variation of the famous tokwa't baboy only the pork is replaced with fish  then added with salted black beans and cooked in thick sweet sauce.
I also discovered where to buy cheaper cream dory here in Baguio. It's priced at 121php per kilogram as compared to 180/kg of pork. Considering this positive point in using cream dory to that of pork, the former is way more practical to use. : )


Ingredients:

  • 500 grams cream dory, thawed, dried and cubed
  • 2 blocks Tofu, cubed
  • 2 tablespoons cornstarch with 3/4 cup water
  • 1 medium onion sliced
  • 2 onion leeks, sliced
  • 1 sprig celery, sliced
  • 2 tablespoon salted black beans, crashed 
  • 2 tablespoons muscovado sugar
  • soy or oyster sauce to taste
  • 1 tablespoon sesame oil
  • 1/2 cup canola oil

Cooking Procedure:

  1. Heat pan then add canola oil. Heat oil enough then fry tofu until light brown.
  2. Fry next cream dory until light brown.
  3. Drain both tofu and cream dory or use paper towels, set aside.
  4. On the same pan, leave a tablespoon of canola oil saute onions then add black beans.
  5. Pour water with cornstarch, add celery, onion leeks, sugar and sauce soy/oyster.
  6. Cook until it thickens, mix in tofu and cream dory.
  7. Add sesame oil and mix before turning off heat.
  8. Serve hot.
