Lumpiang Gulay For Makku

I discovered a way to trick Makku my teenage nephew to eat vegetables. Prepare him Lumpiang Gulay with tasty sauce and he can finish 20 pieces in one sitting. I made this Lumpiang Gulay yesterday as treat for him this summer. : ) The children, my four wards finished dinner in no time with lumpiang gulay. Try it too at home.


Ingredients:
  • 500g monggo sprout
  • 250g french beans, sliced diagonally
  • 250g carrots julienned
  • 1 large onion, sliced
  • 3 pieces longanisa ( chicken or pork can also be used)
  • pepper
  • fish sauce
  • 50 pieces white lumpia wrapper
  • 250g vegetable oil for frying

Method:
 Lumpiang Gulay:
-Saute onion, longanisa for 3 minutes.
-Add french beans and carrots, cook for 2 minutes.
-Add monggo sprouts, season with pepper and fish sauce.
-Stir for 1 minute more.
-Transfer vegetables in a large strainer.

-Leave it to cool down
-Per tablespoon of the vegetable wrap it with lumpia wrapper.
-Seal end with water.
-Do the rest with the vegetables.
-Heat vegetable oil then fry lumpiang gulay until golden brown.
- Place cooked lumpiang gulay in a strainer to drain excess oil.
-Serve lumpiang gulay with the sauce.

Sauce:
While waiting for the cooked vegetables to cool down, prepare the sauce. Makku just loves this sauce.
  1. In a  small bowl, put 1 cup sugar cane vinegar.
  2. Add liberally tomato catsup to bring color and thicken the sauce.
  3. Mix in 6 cloves garlic, pounded and sliced.
  4. Sugar, salt and pepper to taste.
  5. Stir with fork.
  6. Set aside.
