My son and I have religiously followed the Luntiang Lunes (Green Monday) which was launched July, 2011 by Dr. Custer Deocaris. During the span of 9 months from July 2011 to March 2012, I have prepared dishes from more popular vegetables like bamboo shoots, bitter gourd, jute leaves, Moringa, bottle gourd, broccoli, and sayote.
I plan to continue serving vegetable dishes for my children even on their summer vacation. Thus made me search for other possible plants to prepare. In the process, I found out that Spinach Vine/ Malabar Nightshade/Alugbati is found in Dr. Custer Deocaris' List of 10 Indigenous Filipino Vegetables. I tried this Alugbati Salad at once since it's just easy to prepare.
Ingredients and Preparation:
- Wash alugbati leaves, drop in boiling water and cook for 1-2 minutes.
- Wash leaves again with cold or ice water. Drain
- Arrange on a plate, top with slices of tomatoes
- Pour some bagoong or fish sauce
