Parmesan-Crusted Chicken

My eldest son keep on requesting for this chicken recipe which he named it 'crispy chicken'. I usually prepare this during occasions only and without removing the chicken bone. The downside with this kind of preparation is a longer cooking time.
On the eve of New Year I decided to debone and fillet chicken breasts and cook the same way as my son loves. I enjoyed this easier and shorter time of preparation.
In CASA Veneracion site however, I found a much better and I think yummier 'crispy chicken' recipe. Here's the Parmesan-Crusted Chicken I prepared for our dinner which made my two tykes keep asking for more...=)


Ingredients:
  • 4 chicken thigh fillets with skin
  • dried basil leaves
  • dried oregano leaves
  • pepper
  • 1 tsp fish sauce (patis)
  • 1/4 cooking oil
  • Krispers bread crumbs
  • 2 tablespoons grated parmesan cheese
  • 1 egg beaten
  • 1/8 cup cornstarch
  • 1/8 cup flour

Method:
1. For the Parmesan-Crusted Chicken
 - Wash chicken thighs, pat dry with paper towels, debone and fillet
 - Pound the fillet with mallet until uniform in thickness
 - Season fillet with fish sauce, pepper, dried basil and oregano leaves
 - Leave it for 30 minutes to an hour
 - Prepare the egg in one plate, in another plate the Krispers bread crumbs
 - Mix the cornstarch, flour and parmesan cheese in another plate
 - Heat the cooking oil in the frying pan
 - Get one chicken fillet, coat it first with flour, cornstarch and parmesan cheese mixture
 - Coat it next with egg and lastly coat it with Krispers bread crumbs
 - Drop fillet in the frying pan, cook it till golden brown
 - Do the same with the three remaining chicken fillets

2. Steamed Vegetables
 - Cut 4 pieces carrots into cubes
 - Remove sweetcorn kernels from its cob
 - Prepare 200g green peas
 - Steam first sweetcorn kernels for 10 minutes
 - Add carrots, sweet peas and steam for another 5 minutes

3. Sauce
 - In small pan, melt 1 tablespoon butter until it starts to smoke
 - Add 1 tablespoon cornstarch
 - Add 1/2 cup milk, stir until it thickens
 - Add salt and pepper to taste
