As much as possible I try to prepare food for my eldest son's lunch than buy processed meats. One of the recipes I make at home is the Chicken Tocino which turns out his favorite. I love to hear him say...'wow so yummy and tender, Nanay!' whenever he takes a bite of chicken tocino.

Procedure: The recipe I use is given by my Aunt Helen. Its measurement originally meant for 15k pork. I calculated and experimented with the measurements until coming up with the proportion my son loves.

Ingredients:
- 1k boneless chicken
- 227g crushed pineapple
- 8g Knorr All-in-One+Meaty Seasoning Granules
- 13g rock salt
- 175g brown sugar

- Slice the boneless chicken thinly and place it in a large container.
- Put all the remaining ingredients and mix well using gloves.
- Cover, place in the refrigerator and leave it for 2-3 days.
How to Cook Chicken Tocino:
- Place some chicken tocino with juice from the marinade in a pan, add water and 1 tablespoon canola oil
- Cook tocino until water has totally evaporated over low fire
- Mix fast to prevent burning.
- Remove from the heat when the chicken tocino turns golden brown.
- Serve hot.
